Colombia Pitalito Paso Fino coffee comes from Pitalito, Huila — the heart of Colombia’s largest coffee-producing municipality. NKG Export company SKN Caribecafe buys directly from producers in this region and partners with over 900 coffee farmers through value-added programs.
SKN works directly alongside producers running workshops that focus on improving coffee quality, addressing social wellbeing, supporting sustainable practices and enhancing quality of life. It is from these programs that high-quality coffee is selected to create this micro-regional lot.
The coffee is a blend of Caturra, Castillo and Colombia varieties. The cherry is first machine pulped. Then, the coffee undergoes a hybrid fermentation process. This process begins with an extended anaerobic fermentation of approximately 75 hours, which is carried out in sealed bags or drums without air exposure. Next, the coffee is moved to open tanks for 30 hours of aerobic oxidation. This two-stage process builds greater complexity in the cup, developing a more distinctive and layered flavor profile.
About the Name
The Pitalito micro-regional logo features the Paso Fino horse. While this distinctive breed of horse is not native to Pitalito, breeding and training them has become a cornerstone of Pitalito’s regional identity, celebrated through massive exhibitions and fairs.
