Mexico FESICH Mountain Water Decaf Organic

Mexico FESICH Mountain Water Decaf Organic comes to us from approximately 2,500 coffee farmers in Chiapas who are members of Federación de Sociedades Cooperativas Indígenas y Ecológicas de Chiapas F.C. de R.L. (FESICH). Producers are located in the municipalities of Ángel Albino Corzo, Capitán Luis Ángel Vidal, La Concordia and Montecristo de Guerrero.

These producers grow coffee at high elevations in tropical forest landscapes just east of the El Triunfo Biosphere Reserve. One of Mexico’s most important protected areas, El Triunfo is home to incredibly diverse cloud forests that provide habitat for endemic and endangered species and an important stopover for migratory birds. Its humid tropical environment extends into the surrounding coffee-growing regions.

About FESICH

Based in the Fraylesca region of Chiapas, FESICH provides its producer-members with training and technical support focused on organic coffee production, farm management and certification.

A network of regional technical advisers and local promoters works closely with producers, providing training and hands-on assistance tailored to their farms and growing areas. Support covers nursery management, organic production practices, pruning to improve air circulation and plant health and plant nutrition through agroecological systems. Because advisers and promoters maintain close contact with members, they also help producers respond to challenges as they arise. FESICH provides ongoing updates and training on organic certification requirements as standards evolve.

In 2026, FESICH is distributing seeds and polyethylene nursery bags to help producers establish their own seedbeds and nurseries using improved, rust-resistant coffee varieties. The co-op also works with demonstration plots managed by producers. Here, organic production techniques are applied to achieve profitable and sustainable production, as a model for members.

FESICH also provides training related to Fairtrade certification and social standards, including the prohibition of child labor, organizational and legal requirements and the management of Fairtrade premiums. As organic and Fairtrade standards continue to evolve, the cooperative has strengthened its training programs to help members understand and meet certification requirements.

Mountain Water Process

Mountain Water Process (MWP) is a method of indirect decaffeination that aims to preserve the coffee’s inherent characteristics. All our MWP decafs are processed by Descamex, which uses pure water from Pico de Orizaba, Mexico’s highest mountain. The process begins with a chemical analysis to determine optimal conditions, and then the beans are steamed and prepared for extraction. The extraction process uses a water-based saturated solution that removes the caffeine while keeping the coffee’s flavor compounds in place.
