Mexico Providence Mills SHG Organic is produced by Providence Mills, a collection of farms and joint mill operation in Chiapas, Mexico. Providence Mills is owned by Mrs. Saida Soraya Henaine who inherited the 80-year-old operation from her father. Saida Soraya Henaine is responsible for successfully converting three family-owned farms (Finca Paraiso, Finca Holanda, and Finca San Pedro) and the mill into an organic enterprise 24 years ago. Within the farms, she maintains an apiary, supporting these critical pollinators as well as producing honey. Additionally, Mrs. Saida Soraya Henaine has built infrastructure at the mill to support her staff. This includes a school, dining room, bathrooms, and houses for coffee pickers and maintenance workers. Some of the staff stay at the facilities year-round, while others join on a seasonal basis.

About Huixtla, Chiapas

Providence Mills is located a 1.5-hour drive from Huixtla, Chiapas a region that serves as a strategic hub for receiving coffee from the surrounding mountains. Huixtla is famous for its emblematic, bell-like stone known as “La Piedra de Huixtla.”  (In native Nahuatl, ilhuicatl-huitztlan means “the sky where thorns abound” and refers to the celestial region of the universe in Mexica, pre-Aztec, mythology.)

The village is home to Huixtla stone which legend tells was once a giant bell. Twenty men carried a bell back from Guatemala. After a month of journeying, they rested and placed it down on the stones of the mountain. They were waiting for a sight “a rooster sound, a donkey bray, a horse neigh and a bell ring; should they carry it again to continue their journey.” But in their exhaustion they forgot to listen, and when they tried to carry the bell again they could not. The bell henceforth became stone looking over the West. After that, local villages and farms were prosperous and people brought offerings to the stone after each harvest.
