The sustainability-focused Hacienda Sonora specializes in honey and natural processing (which require minimal water) and runs on 100 percent renewable energy. Its Honey Natural is a 50/50 blend of natural and black honey–processed coffees; Venecia is from a variety of Caturra that’s very slow-ripening and so ultimately very sweet; and Colorado Honey was processed at Sonora but grown on Colorado, a nearby farm that the Sonora team is nurturing and teaching new processing tips.

Leonel Vindas has been growing coffee for 49 years, on the steep slopes of the Tacuotari Mountains, and his business has supported his family and paid for his daughter’s education as a physical therapist. “I want to continue growing coffee,” he says, “and that is why I thank Ceca and InterAmerican Coffee for all the support that they have given me.”

The Palmichal Micro-Mill opened in 2015, between Costa Rica’s Central Valley and Tarrazú regions. It works with 30 selected farms, offers full traceability—from the grower to the Brix number—and is dedicated to applying exactly the right processing method to every lot, to ensure economic sustainability for its growers and impeccable coffee for roasters.

FINCA TIRRA

After helping famers to mill and market their coffees for 50-plus years, the managing body of Coope Tarrazú decided to purchase a farm and produce its own coffees. Its honey-process coffee, dried on raised beds, is a customer favorite.
