Mexico Mountain Water Process Decaf Organic comes from FESICH (Federación de Sociedades Cooperativas Indígenas y Ecológicas de Chiapas), a producer organization representing approximately 2,500 coffee farmers in Chiapas. FESICH’s primarily indigenous farmer-members grow coffee in the municipalities of Ángel Albino Corzo, Capitán Luis Ángel Vidal, La Concordia and Montecristo de Guerrero, just east of the El Triunfo Biosphere Reserve. This evergreen cloud forest is among the most diverse in Mexico, and the reserve serves as an important refuge for endemic and endangered species, as well as an important stopover for migratory birds. The same tropical mountain environment extends into the surrounding, unprotected regions, creating perfect coffee farming conditions. FESICH coffee farmers are committed to protecting this unique ecosystem through sustainable farming practices.
Cooperative Services
Cooperative members have access to technical training and support focused on organic production, including nursery management, pruning, plant nutrition and agro-ecological practices, as well as ongoing guidance for Organic and Fairtrade certification.
The cooperative also supports producer-managed demonstration plots that showcase sustainable and profitable production practices. In 2026, FESICH is distributing seeds and polyethylene bags to members so they can establish their own seedbeds and nurseries using improved, rust-resistant coffee varieties. Beyond agronomy, FESICH provides training on Fairtrade standards and social issues, helping members to meet evolving certification requirements.
